Sabor Sajoma started with a simple idea: to bring a piece of home to New Haven. Maria and Humberto Espinal, both from the Dominican Republic, wanted to share the food they grew up with and the traditions that have stayed with them over the years.

"Sajoma" comes from San Jose de las Matas, Maria's hometown, and the place that inspired so much of what they brought to the restaurant. At its heart, Sabor Sajoma is a reflection of where they came from, what they grew up with, and what they're proud to share in New Haven.

When Maria and Humberto took over the former Oriental Pantry from previous owner, Kim, they wanted to honor the legacy she had built in New Haven over nearly four decades. They kept many of the unique products and traditions that made the market special, carrying Kim's spirit forward while making the space their own.

Maria and Humberto are proud to be part of New Haven and look forward to continuing to serve the community that welcomed them.
